Step One
Warm the oil in a large non-stick skillet over medium heat on the stove.
To incorporate some pasta water into the sauce, begin cooking the pasta about the same time, depending on its cooking duration. Refer to the package for guidance.
Step Two
Add the onions and sauté for 5 minutes, making sure to stir frequently. If you prefer them softer, feel free to cook them a bit longer.
Step Three
Introduce the chicken and cook it for about 10 minutes until it’s fully done, stirring regularly. Normally, I would brown the outside since the inside cooks while the sauce simmers, but this recipe doesn’t require much simmering, so I recommend ensuring the chicken is cooked thoroughly before proceeding. Cut a larger piece to check that the center is done.
Step Four
Mix in the chilli and garlic. If you opt for fresh instead of puree, allow it to cook for 2-3 minutes before advancing. If you’re using puree, simply stir it in and continue.
Step Five
Incorporate the peppers and mix thoroughly. If you enjoy them quite soft, let them cook a bit longer.
Step Six
Stir in the sweet chilli sauce along with the soft cheese. Cook until the cheese has melted and the sauce is creamy, stirring often. This will happen quickly.
Step Seven
Add a ladle of pasta water and mix well.
If the sauce appears overly watery, let it simmer for 5-10 minutes. However, it shouldn’t be too liquidy, so it should be fine.
Step Eight
Drain the pasta and combine it with the sauce. Using tongs makes this much easier.
Step Nine
Check the chicken with a food thermometer to ensure it has reached 75 degrees C, then serve.
