While the original Nobu recipe uses black cod (also referred to as sable fish) and requires marination for as long as three days, we’re going for a more accessible approach with regular cod and a quick 6-hour marination. This recipe is ideal for a weeknight dinner, delivering full flavor without the wait. Plus, in the UK, black cod can be quite elusive, making this alternative stand out.

Cod: I opted for cod loin since black cod (sablefish) isn’t readily available in the UK.
White miso paste
Japanese white wine vinegar: While sake is the traditional choice for this recipe, I substituted it with white wine vinegar, which worked out splendidly.
Mirin
Brown sugar
Pinch of salt to taste: This is optional, particularly if you plan to marinate the cod for a longer duration.
Steps to Prepare Air Fryer Miso Cod
Prepare the marinade: In a jug, combine mirin, white wine vinegar (or sake), and brown sugar, mixing until the sugar dissolves. Add the white miso paste and stir to blend.
Lightly season the cod with a touch of salt.
Marinate the fish: Place the cod pieces in a glass bowl or an oven-safe dish. Pour some marinade into the bottom of the dish, add the fish, then drizzle the remaining marinade over the cod, making sure every part is well-coated. Cover with a lid or plastic wrap and refrigerate for at least 6 hours or up to 72 hours for maximum flavor.
Preheat the air fryer to 400F/200C for 3 minutes and lightly spray with cooking oil.
Cook the fish: Remove the cod from the marinade, letting any excess drip off, and place it in the air fryer basket.

- 6 Cod loins (about 120g) each. Substitute with black cod
- ½ cup White miso paste
- ⅓ cup Japanese white wine vinegar see note 1
- ⅓ cup Mirin
- ¼ cup Brown sugar
- Pinch of salt to taste see note 2

Create the marinade: In a jug, mix mirin, white wine vinegar (or sake), and brown sugar, stirring until the sugar has dissolved. Next, add the white miso paste and combine well.

Lightly season the cod with salt (Refer to note 2 below)

Marinate the fish: Place the cod pieces in a glass bowl or an ovenproof dish. Pour some marinade into the base of the dish, add the fish, then cover the cod with the rest of the marinade, ensuring every bit is coated. Seal the dish and refrigerate for a minimum of 6 hours or up to 72 hours for utmost flavor.

Preheat the air fryer to 400F/200C for 3 minutes and give it a light spray of cooking oil.

Prepare the fish: Take the cod out of the marinade, letting any excess drip off, and place it into the air fryer basket.

Air fry at 400F/200C for 10-12 minutes or until the cod is cooked through and slightly caramelized around the edges. Cooking time may vary depending on the thickness of the fish.
