How to Prepare Simple Gouda Mac and Cheese – Step-by-Step Guide

Step One
Cook the pasta according to the instructions on the package, then drain and set aside. Aim for an al dente texture so it won’t become mushy in the oven.
I typically cook the pasta while I prepare the milk for my sauce, but you might prefer to tackle this step first.
Step Two
Preheat your oven to 180 degrees C (convection mode).
Step Three
In a large pan, melt the butter and garlic puree over low heat.
Step Four
Mix in the flour and whisk for a few minutes until it forms a smooth ball, with all the flour seamlessly blended into a roux. It should resemble play-dough.
Step Five
Gradually add the milk, whisking until smooth before adding more. I start with small amounts, then increase once there are no flour lumps remaining.
Step Six
Once all the milk is incorporated, bring the mixture to a gentle simmer.
You can increase the heat a little to expedite this process.
Step Seven
Allow it to simmer for 3 minutes while whisking continuously.
Step Eight
Take the pan off the heat.
Step Nine
Fold in most of the cheese (reserving some for topping) along with the mustard.
Step Ten
Season with salt and pepper to your liking.
Step Eleven
Add the cooked macaroni and stir until every piece is well-coated in the cheese sauce.
Step Twelve
Transfer the mixture to an oven-safe dish, spreading it out evenly.
Step Thirteen
Top with the remaining cheese.
Step Fourteen
Bake for 20-25 minutes or until the top turns a lovely golden brown and the sauce is bubbly.
I usually place my dish on a baking sheet to catch any overflow that may bubble over or run down the sides.
